Born 1975, a true Piombinese, he returns home in 2005 after 11 years of experiences abroad and in Italy. Simone meets Andrea and the match between their two visions gives birth to the Boncompagni project. Exuberant, passion-driven, and strong in a deep knowledge of wines that he cultivates in the creation of an impressive cellar full of emblazoned labels, Simone is attentive to every single detail of the proposal to his clients.

After studies in Florence and a period of national experiences, he returns home and in 1999 opens the Taverna. His patrimony of knowledge and the desire to experiment boost him to pursue the path of increasingly innovative cuisine. His cooking is an ever-evolving journey.
